Prepare your chicken by placing the lemon, herbs and garlic in the cavity. Then butter the skin, sprinkle with herbs, salt and pepper.
Ideally using a kettle BBQ, prepare cooking by placing the burning coals around the edges and placing a tray amongst in order to catch the juices in the middle.
Place the chicken on the rack and cover.
Depending on the size of your chicken it will take 1 hour 30 minutes – 2 hours 15 minutes. Always double check cooking times.
Baste your chicken every 30 minutes with the caught juices and replenish coals every hour.
